- 1 large onion, sliced
- 3 cloves garlic, minced
- 2 cups beef broth

- 1 tsp dried rosemary
- 2 tbsp cornstarch mixed with 2 tbsp water (optional, for thickening)
Instructions
- Heat olive oil in a skillet over medium-high heat. Season chuck roast with salt, pepper, garlic powder, onion powder, and paprika. Sear on all sides until browned.
- Place potatoes, carrots, onion, and garlic in the bottom of the slow cooker.
- Set the seared roast on top of the vegetables.
- Whisk beef broth, tomato paste, thyme, and rosemary together, then pour over the roast.
- Cover and cook on low for 8 hours, until beef is fork-tender.
- Optional: For a thicker gravy, remove roast and vegetables, stir cornstarch slurry into the broth, and cook on high for 10–15 minutes.
- Serve warm with vegetables and spoon extra gravy over the top.
