  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 lb baby potatoes
  • 3 carrots, peeled and cut into chunks
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 tbsp cornstarch mixed with 2 tbsp water (optional, for thickening)

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Season chuck roast with salt, pepper, garlic powder, onion powder, and paprika. Sear on all sides until browned.
  2. Place potatoes, carrots, onion, and garlic in the bottom of the slow cooker.
  3. Set the seared roast on top of the vegetables.
  4. Whisk beef broth, tomato paste, thyme, and rosemary together, then pour over the roast.
  5. Cover and cook on low for 8 hours, until beef is fork-tender.
  6. Optional: For a thicker gravy, remove roast and vegetables, stir cornstarch slurry into the broth, and cook on high for 10–15 minutes.
  7. Serve warm with vegetables and spoon extra gravy over the top.

Notes

  • Brown the roast well for deeper flavor.
  • You can swap in other root vegetables if desired.
  • Let the roast rest for 10 minutes before slicing to keep the juices in.
  • If you don’t want to use cornstarch, you can thicken the gravy with a little flour slurry or reduce the liquid by simmering after cooking.
