  • lbs boneless, skinless chicken breasts
  • 1 cup uncooked long-grain rice
  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 packet Italian seasoning mix (halal-friendly)
  • 1 cup chicken broth
  • ½ cup sour cream
  • 1½ cups shredded mozzarella or cheddar cheese
  • 2 tbsp unsalted butter, melted
  • ½ tsp black pepper

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a baking dish.
  2. Spread uncooked rice evenly in the bottom of the dish.
  3. In a bowl, mix cream of chicken soup, cream of mushroom soup, Italian seasoning mix, chicken broth, sour cream, melted butter, and black pepper.
  4. Pour the mixture evenly over the rice.
  5. Place chicken breasts on top and gently press them into the sauce.
  6. Cover tightly with foil and bake for 50 minutes.
  7. Remove foil, sprinkle cheese evenly over the top, and bake uncovered for another 15 minutes until cheese is melted and bubbly and chicken is cooked through.
