Instructions
- Preheat oven to 350°F (175°C). Grease and flour a bundt or loaf pan.
- In a large bowl, cream together butter and sugar until light and fluffy.
- Beat in eggs one at a time, then mix in sour cream, reduced apple cider, and vanilla extract.
- In a separate bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Gradually add dry ingredients to the wet mixture, mixing just until combined.
- Pour batter into prepared pan and smooth the top.
- Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.
- For glaze, whisk together powdered sugar, cider, and cinnamon. Drizzle over cooled cake if desired.
