  • 1 package (9 oz) cheese tortellini (fresh or refrigerated)
  • 2 cups fresh spinach
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh basil or parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add turkey sausage and cook until browned, breaking it apart as it cooks.
  2. Add onion, garlic, carrot, and celery. Sauté for 4–5 minutes until softened and fragrant.
  3. Stir in diced tomatoes, chicken broth, water, Italian seasoning, smoked paprika, salt, and pepper. Bring to a gentle boil.
  4. Reduce heat and simmer for 10 minutes to blend flavors.
  5. Add tortellini and cook according to package instructions (usually 5–7 minutes) until tender.
