  • 2 lbs halal beef stew meat, cut into chunks
  • 3 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 3 large carrots, sliced
  • 3 celery stalks, chopped
  • 3 medium potatoes, cubed
  • 3 tbsp tomato paste
  • 6 cups beef broth
  • 1 tbsp halal Worcestershire sauce
  • 1 bay leaf
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 2 tbsp flour (optional for thickening)
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat. Season the beef with salt and pepper, then sear until browned on all sides. Remove and set aside.
  2. Add the onion, carrots, and celery to the pot and cook until softened.
  3. Stir in the garlic and cook for 1 minute until fragrant.
  4. Add the tomato paste and flour (if using), mixing until well combined.
  5. Pour in the beef broth and halal Worcestershire sauce, scraping the bottom to release browned bits.
  6. Return the beef to the pot. Add potatoes, thyme, rosemary, and bay leaf.
  7. Bring to a simmer, cover, and cook on low for 2½–3 hours, stirring occasionally, until the beef is tender.
  8. Adjust salt and pepper to taste.
  9. Garnish with fresh parsley before serving warm.

Notes

  • For deeper flavor, simmer longer or use a lower heat and partially cover.
  • 2 tbsp flour is optional for thickening; omit for gluten-free or use a gluten-free thickener.
