Description

  • 4 boneless skinless chicken breasts (or thighs)
  • 1½ cups long-grain white rice (uncooked)
  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (10.5 oz) cream of mushroom soup
  • 2 cups chicken broth
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp paprika
  • ½ tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp butter, melted
  • Optional: chopped parsley for serving

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In the dish, whisk together rice, cream of chicken soup, cream of mushroom soup, broth, milk, garlic powder, onion powder, paprika, thyme, salt, and pepper.
  3. Nestle the chicken breasts on top of the rice mixture. Brush with melted butter and sprinkle with a little extra seasoning if desired.
  4. Cover tightly with foil and bake 1 hour.
  5. Remove foil, top with cheddar cheese, and bake another 10–15 minutes until chicken is cooked through and rice is tender.
  6. Let rest 5 minutes before serving. Garnish with parsley.

Notes

  • Can use chicken thighs or breasts depending on preference.
  • For a lighter version, use reduced-fat cream soups and skim milk.
  • If rice is not fully tender after the initial bake, re-cover and bake a few more minutes until done.
