  • 3 tbsp olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 3 large carrots, sliced
  • 3 celery stalks, chopped
  • 3 medium potatoes, cubed
  • 3 tbsp tomato paste
  • 1 tbsp Worcestershire sauce (halal)
  • 6 cups beef broth
  • 1 bay leaf
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 2 tbsp flour (optional for thickening)
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large Dutch oven over medium-high heat. Season beef with salt and pepper, then sear until browned on all sides. Remove and set aside.
  2. Add the onion, carrots, and celery to the pot. Cook for 5 minutes until softened.
  3. Stir in garlic and cook for 1 minute.
  4. Add tomato paste and flour (if using) and stir until combined.
  5. Pour in the beef broth and Worcestershire sauce, scraping the bottom to release all the browned bits.
  6. Return the beef to the pot and add potatoes, thyme, rosemary, and bay leaf.
  7. Bring to a gentle simmer, cover, and cook on low heat for 3½–4 hours, stirring occasionally until the beef is melt-in-your-mouth tender.
  8. Adjust salt and pepper to taste.
  9. Garnish with fresh parsley before serving.

  • For extra richness, sear the beef in batches to prevent overcrowding.
  • If you prefer thicker broth, whisk in flour at step 4 or make a slurry with water at the end and simmer a few minutes more.
