- 1 tbsp Worcestershire sauce (halal)
- 6 cups beef broth
- 1 bay leaf
- 1 tsp dried thyme

Instructions
- Heat olive oil in a large Dutch oven over medium-high heat. Season beef with salt and pepper, then sear until browned on all sides. Remove and set aside.
- Add the onion, carrots, and celery to the pot. Cook for 5 minutes until softened.
- Stir in garlic and cook for 1 minute.
- Add tomato paste and flour (if using) and stir until combined.
- Pour in the beef broth and Worcestershire sauce, scraping the bottom to release all the browned bits.
- Return the beef to the pot and add potatoes, thyme, rosemary, and bay leaf.
- Bring to a gentle simmer, cover, and cook on low heat for 3½–4 hours, stirring occasionally until the beef is melt-in-your-mouth tender.
- Adjust salt and pepper to taste.
- Garnish with fresh parsley before serving.
