Description
Best Pesto Grilled Cheese: A gooey, pesto kissed twist on a classic sandwich with mozzarella and sharp cheddar melted between buttery bread.
Ingredients

- 4 slices thick-cut bread (sourdough or Italian works great)
- 2 tbsp softened butter
- 2 tbsp basil pesto (store-bought or homemade)
- 4 slices mozzarella cheese
- 4 slices sharp cheddar cheese
Instructions
- Spread butter on one side of each slice of bread. Spread pesto on the opposite side.
- Layer mozzarella and cheddar on the pesto side of two slices of bread. Top with the other slices, butter-side out.
- Heat a nonstick skillet over medium heat. Place sandwiches in the skillet and cook 3–4 minutes per side, or until golden brown and the cheese is melted.
- Let cool slightly before slicing. Serve with tomato soup or enjoy on its own!
