  • For the nests:
  • 2 cups chow mein noodles
  • 1 ½ cups semi-sweet chocolate chips
  • 1 tbsp coconut oil
  • For topping:
  • ½ cup melted chocolate for center
  • 36 pastel candy eggs

Instructions

  1. Preheat oven to 350°F 175°C. Line a baking sheet with parchment paper.
  2. In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add eggs and vanilla extract, mixing until combined.
  4. In a separate bowl, whisk flour, cocoa powder, baking soda, and salt. Gradually add dry ingredients to wet mixture until fully incorporated.
  5. Scoop dough onto baking sheet and bake 9–11 minutes. Cool completely.
  6. Melt chocolate chips with coconut oil until smooth. Stir in chow mein noodles until evenly coated.
  7. Spoon small portions of the mixture onto each cooled cookie, shaping into nests with a slight indent in the center.
  8. Add a small spoonful of melted chocolate into the center of each nest and top with three candy eggs.
  9. Allow chocolate to set before serving.
