- 12 oz halal turkey sausage, sliced
- 1 small onion, diced
- 1 bell pepper, diced (any color)
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- ½ tsp ground cumin
- ¼ tsp black pepper
- 1 cup long grain white rice
- 2 cups chicken broth or water
- 1 (15 oz) can black beans, drained and rinsed
- Salt to taste
- Fresh cilantro or parsley for garnish (optional)
- Lime wedges for serving (optional)
Instructions
- Heat olive oil in a large skillet or pot over medium heat.
- Add the sliced turkey sausage and cook until browned, about 5 minutes.
- Stir in the onion and bell pepper; sauté for another 3–4 minutes until softened.
- Add garlic, smoked paprika, cumin, and black pepper; cook for 1 minute until fragrant.
- Stir in the rice and toast for 1–2 minutes.
- Pour in the chicken broth or water and bring to a boil.
- Reduce heat to low, cover, and simmer for 15–18 minutes, or until the rice is tender and liquid is absorbed.
- Stir in the black beans and heat through for 2–3 minutes.
- Taste and season with salt as needed.
- Serve with chopped cilantro and lime wedges if desired.
Notes
- This dish is naturally gluten-free if the sausage is certified gluten-free.
- For extra color and nutrition, add chopped tomatoes or corn.
- Leftovers refrigerate well for 3–4 days; reheat on the stovetop or in the microwave.
- To make it vegetarian, substitute the sausage with extra vegetables and a pinch of smoked paprika for smokiness.
