Boston Cream Pie Cookies — handheld, creamy treats that mimic the classic Boston Cream Pie in cookie form. - 1 cup unsalted butter, softened
- ¾ cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1 tsp baking powder
- ¼ tsp salt
- 1 box (3.4 oz) vanilla instant pudding mix
- 1½ cups cold milk
- 1 cup semi-sweet chocolate chips
- ½ cup heavy cream
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream butter and sugar together until light and fluffy. Add egg and vanilla, mixing well.
- Stir in flour, baking powder, and salt until a soft dough forms.
- Scoop tablespoon-sized portions, roll into balls, and place on prepared baking sheets. Gently flatten slightly.
- Bake for 10–12 minutes until lightly golden. Cool completely.
- Prepare pudding by whisking pudding mix with cold milk until thick. Chill for 10 minutes.
- Spoon or pipe a small amount of pudding onto the flat side of half the cookies, then top with remaining cookies to make sandwiches.
- Heat heavy cream until just steaming, pour over chocolate chips, let sit 2 minutes, then stir until smooth.
- Spoon chocolate topping over each cookie and allow to set before serving.
Notes
- Chill dough 30 minutes for easier handling.
- Assemble cookies when pudding is thick but still spreadable.
- Store assembled cookies in an airtight container in the fridge for up to 3 days.
- For a dairy-free version, use plant-based butter, milk, and chocolate chips with a dairy-free cream substitute.
