  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 3 cups broccoli florets, chopped small
  • 1 medium carrot, grated
  • 2 cups low-sodium chicken or vegetable broth
  • 1 cup milk or unsweetened almond milk
  • 1 cup Greek yogurt or cottage cheese (blended until smooth)
  • 1 scoop unflavored protein powder (optional, for extra protein)
  • 1½ cups shredded sharp cheddar cheese
  • Salt and black pepper to taste
  • ¼ tsp paprika (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, cooking until fragrant and soft.
  2. Add broccoli, carrots, broth, salt, pepper, and paprika. Bring to a simmer and cook for 10–12 minutes, until the vegetables are tender.
