  • 1 tbsp olive oil
  • 1 lb boneless skinless chicken breast, diced
  • 8 oz halal beef or turkey sausage, sliced
  • ½ lb shrimp, peeled and deveined
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp Cajun seasoning
  • ½ tsp smoked paprika
  • ½ tsp dried thyme
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 cans white beans, drained and rinsed
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded Monterey Jack or mozzarella cheese
  • Optional topping: chopped green onions or parsley

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chicken and halal sausage and cook until lightly browned.
  3. Stir in onion and garlic and cook until softened and fragrant.
  4. Add Cajun seasoning, paprika, thyme, salt, and pepper and stir well.
  5. Add white beans and chicken broth and bring to a simmer.
  6. Cook for 15 minutes, stirring occasionally.
  7. Add shrimp and cook for 3–4 minutes until pink and cooked through.
  8. Stir in heavy cream and shredded cheese until melted and creamy.
  9. Taste and adjust seasoning, then serve warm.

Notes

  • Leftovers keep well in the fridge for 3–4 days. Reheat gently on the stove.
  • Substitute turkey sausage or adjust heat level to taste.
