Ingredients

  • 4 large eggs
  • 2 tbsp milk
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp butter
  • 1½ cups shredded cheddar cheese
  • 4 medium flour tortillas

Instructions

  1. In a bowl, whisk eggs, milk, salt, and pepper until well combined.
  2. Melt butter in a nonstick skillet over medium heat.
  3. Pour in eggs and cook gently, stirring, until just set and fluffy. Remove from heat.
  4. Place a tortilla in a clean skillet over medium heat. Sprinkle cheddar cheese over half of the tortilla.
  5. Spoon scrambled eggs over the cheese, then add a little more cheese on top.
  6. Fold tortilla in half and cook for 2–3 minutes per side until golden and cheese is melted.
  7. Repeat with remaining tortillas. Slice and serve warm.
