Cheeseburger Soup is a creamy, comforting bowl that captures the flavors of a cheeseburger in a warm, family-friendly soup.

- 1 tbsp olive oil
- 1 lb ground turkey or halal beef
- ½ cup diced onion
- ½ cup diced carrots
- ½ cup diced celery
- 2 cloves garlic, minced
- 3 cups peeled and diced potatoes
- 3 cups chicken or vegetable broth
- 1 tsp dried basil
- 1 tsp dried parsley
- ½ tsp salt
- ¼ tsp black pepper
- 3 tbsp unsalted butter
- ¼ cup all-purpose flour
- 1 ½ cups milk
- 2 cups shredded cheddar cheese
- ¼ cup sour cream (or plain yogurt)
Instructions
- In a large pot, heat olive oil over medium heat. Add ground turkey or beef and cook until browned. Remove and set aside.
- In the same pot, sauté onion, carrots, and celery until soft, about 5 minutes. Add garlic and cook for 1 more minute.
- Return the meat to the pot. Add potatoes, broth, basil, parsley, salt, and pepper. Bring to a boil, then reduce heat and simmer for 12–15 minutes, until potatoes are tender.
- In a separate saucepan, melt butter. Stir in flour and cook for 1–2 minutes. Gradually whisk in milk to make a smooth sauce.
- Add the milk mixture to the soup and stir to combine.
- Add shredded cheese and stir until melted. Remove from heat and stir in sour cream.
- Serve warm with crusty bread or croutons.

- Ground turkey or halal beef can be used interchangeably.
- For a gluten-free version, replace all-purpose flour with a gluten-free flour blend.
