- ¼ tsp ground cloves
- ¾ cup unsalted butter, melted and slightly cooled
- ¾ cup brown sugar
- ¼ cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- ½ cup chopped pecans
Instructions
- In a medium bowl, whisk together oats, flour, baking soda, baking powder, salt, and all chai spices.
- In a large bowl, whisk melted butter, brown sugar, granulated sugar, egg, and vanilla until smooth.
- Stir dry ingredients into the wet ingredients until combined. Fold in chopped pecans.
- Cover and chill dough for 15 minutes to help it firm up.
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Scoop 1 ½ tablespoon-sized balls of dough and place 2 inches apart on prepared sheets.
- Bake for 10–12 minutes, until edges are golden and centers are slightly soft.
- Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- Chilling helps cookies hold their shape and minimize spreading.
- Dough can be made ahead and refrigerated up to 2 days.
- For crisper edges, bake an additional minute or two.
