- 2 cups shredded sharp cheddar cheese

- 2 tbsp butter
- 2 tbsp all-purpose flour
- 2 cups whole milk
- ½ tsp salt
- ¼ tsp ground white pepper (or black pepper)
- ¼ tsp paprika
- ¼ cup shredded Colby Jack or extra cheddar (for topping)
Instructions
- Cook macaroni according to package directions until al dente. Drain and set aside.
- In a saucepan, melt butter over medium heat. Stir in flour and cook for 1–2 minutes to form a roux.
- Gradually whisk in the milk, stirring constantly until smooth and slightly thickened (about 3–4 minutes).
- Add salt, pepper, and paprika. Stir in cheddar and Monterey Jack cheeses until melted and smooth.
- Fold in the cooked macaroni until fully coated in cheese sauce.
- Pour into a baking dish and sprinkle with extra cheese on top.
- Broil on high for 3–5 minutes, or until the top is bubbly and golden brown.
- Serve hot and enjoy!

- For a creamier texture, cook pasta until just al dente and don’t overcook it before mixing with the sauce.
- To customize, swap in other cheeses like Colby, Gruyere, or mozzarella for different melting and flavor profiles.
