  • 1 lb boneless skinless chicken breast
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can red enchilada sauce
  • 1 can diced tomatoes
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 3 cups chicken broth
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded cheddar cheese
  • 1/2 cup heavy cream
  • Optional toppings: tortilla strips, sour cream, chopped cilantro

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic and sauté until softened and fragrant.
  3. Add chicken breast, enchilada sauce, diced tomatoes, black beans, corn, chicken broth, cumin, chili powder, paprika, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes until chicken is cooked through.
  5. Remove chicken, shred it, and return it to the pot.
  6. Stir in heavy cream and shredded cheddar cheese until melted and creamy.
  7. Simmer for 5 more minutes, then serve warm with desired toppings.

Notes

  • You can use shredded rotisserie chicken as a shortcut
  • For a dairy free version omit heavy cream and cheese and use dairy free alternatives
