  • 8 bone-in, skin-on chicken thighs
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 small onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 2 tbsp all-purpose flour
  • 2 cups chicken broth
  • Optional: chopped parsley for garnish

Instructions

  1. Pat chicken thighs dry and season both sides with salt, pepper, paprika, garlic powder, and onion powder.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken thighs skin-side down and cook until golden brown, about 5–6 minutes per side. Remove and set aside.
  3. In the same skillet, melt butter and add sliced onion. Cook until softened, then add garlic and cook for 30 seconds.
  4. Sprinkle flour over the onions and stir well. Cook for 1 minute.
  5. Slowly pour in chicken broth while stirring to create a smooth gravy.
  6. Return chicken thighs to the skillet, nestling them into the gravy.
  7. Reduce heat to low, cover, and simmer for 25–30 minutes until chicken is tender and cooked through.
  8. Spoon gravy over the chicken, garnish if desired, and serve warm.

Notes

  • You can substitute bone-in, skin-on thighs with boneless skinless thighs, but adjust cook time accordingly.
  • If you prefer thicker gravy, simmer uncovered a few minutes to reduce.
