Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In a large bowl, cream butter, brown sugar, and granulated sugar until fluffy. Add egg yolk, vanilla, and milk; mix until smooth.
  4. Gradually add dry ingredients and stir until a soft dough forms.
  5. Roll dough into 1-inch balls and place on baking sheets. Use your thumb or the back of a spoon to create an indentation in each cookie.
  6. Bake for 9–11 minutes, until set around the edges. If the centers puff up, gently press down again while warm.
  7. To make ganache, heat cream until hot (not boiling) and pour over chocolate chips. Let sit 1 minute, then stir until smooth.
  8. Spoon ganache into each cookie center and let set at room temperature or chill slightly for a firmer texture.
