  • 2 lbs halal beef stew meat, cut into chunks
  • 3 tbsp olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 carrots, sliced
  • 3 medium potatoes, cubed
  • 3 tbsp tomato paste
  • 4 cups beef broth
  • 1 tbsp Worcestershire sauce (halal)
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 bay leaves
  • 2 tbsp cornstarch + 2 tbsp water (optional for thickening)
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sear beef on all sides until deeply browned. Remove and set aside.
  2. Add onion and carrots to the pot; sauté 4–5 minutes. Stir in garlic and cook for 30 seconds.
  3. Mix in tomato paste and cook 1 minute.
  4. Return beef to the pot along with potatoes, broth, halal Worcestershire, thyme, rosemary, paprika, salt, and pepper.
  5. Bring to a boil, then reduce heat, cover, and simmer for 2–2½ hours until beef is tender.
  6. Optional: stir in cornstarch slurry to thicken; simmer 5 minutes.
  7. Remove bay leaves, adjust seasoning, and garnish with parsley.

Notes

  • Prep ahead: chop vegetables the day before for quicker cooking.
  • If you prefer a thicker sauce, increase cornstarch slurry or simmer longer uncovered to reduce.
