  • 2 tbsp olive oil, divided
  • 2 cups cottage cheese
  • 12 avocados, sliced
  • 1 lb lean ground beef
  • 1 packet taco seasoning (~3 tbsp)
  • 2 sweet potatoes, peeled and diced
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/21 cup cilantro, chopped
  • hot honey, for drizzling
  • optional: jalapeños, red pepper flakes, lime juice

Instructions

  1. 1. Toss diced sweet potatoes with olive oil, salt, pepper, paprika, garlic and onion powder.
  2. 2. Air fry at 400°F for 12–15 min or bake at 425°F for 25–35 min until tender.
  3. 3. Cook ground beef in olive oil, add taco seasoning, cook through.
  4. 4. Assemble bowl: cottage cheese base, sweet potatoes, beef, avocado, cilantro.
  5. 5. Top with hot honey, jalapeños, red pepper flakes, lime juice as desired.

Notes

  • Use ground chicken or turkey instead of beef if preferred.
  • For extra heat, add fresh jalapeños or sriracha drizzle.
