A hearty, protein-rich bowl combining roasted sweet potatoes, seasoned ground beef, creamy cottage cheese, and fresh toppings for a satisfying meal.

- 2 tbsp olive oil, divided
- 2 cups cottage cheese
- 1–2 avocados, sliced
- 1 lb lean ground beef
- 1 packet taco seasoning (~3 tbsp)
- 2 sweet potatoes, peeled and diced
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/2–1 cup cilantro, chopped
- hot honey, for drizzling
- optional: jalapeños, red pepper flakes, lime juice
Instructions
- 1. Toss diced sweet potatoes with olive oil, salt, pepper, paprika, garlic and onion powder.
- 2. Air fry at 400°F for 12–15 min or bake at 425°F for 25–35 min until tender.
- 3. Cook ground beef in olive oil, add taco seasoning, cook through.
- 4. Assemble bowl: cottage cheese base, sweet potatoes, beef, avocado, cilantro.
- 5. Top with hot honey, jalapeños, red pepper flakes, lime juice as desired.
Notes
- Use ground chicken or turkey instead of beef if preferred.
- For extra heat, add fresh jalapeños or sriracha drizzle.
