  • 1 lb lean ground beef or ground turkey
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 3 medium carrots, sliced
  • 2 celery stalks, chopped
  • 1 red bell pepper, chopped
  • 2 cups corn kernels (fresh, canned, or frozen)
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 (15 oz) can diced tomatoes
  • 4 cups low-sodium beef or vegetable broth
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • Salt and black pepper to taste
  • 2 tbsp olive oil
  • Fresh cilantro or parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, cooking until fragrant and soft.
  2. Add the ground beef or turkey and cook until browned, breaking it up as it cooks. Drain any excess fat if necessary.
  3. Stir in carrots, celery, and bell pepper. Cook for 5 minutes until vegetables begin to soften.
  4. Add corn, beans, diced tomatoes, broth, and seasonings. Stir well to combine.
  5. Bring to a boil, then reduce heat and simmer for 15–20 minutes until vegetables are tender and flavors meld.
  6. Taste and adjust seasoning as needed.
  7. Garnish with fresh cilantro or parsley before serving.

Notes

  • You can substitute ground turkey for beef based on preference or availability.
