  • 4 carrots, sliced
  • 45 potatoes, peeled and cubed
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 3 cups beef broth
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce (halal)
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp paprika
  • ½ tsp black pepper
  • Salt to taste
  • 2 bay leaves
  • 2 tbsp cornstarch mixed with 2 tbsp water (optional, for thickening)
  • Optional: chopped fresh parsley for garnish

Instructions

  1. Place beef, carrots, potatoes, onion, and garlic into the crockpot.
  2. In a bowl, whisk together beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, paprika, pepper, and salt.
  3. Pour the broth mixture over the ingredients and add bay leaves.
  4. Cover and cook on low for 8 hours or on high for 4–5 hours until beef is tender.
  5. For a thicker stew, stir in the cornstarch slurry during the last 30 minutes of cooking.
  6. Remove bay leaves and serve warm, garnished with parsley if desired.
