Cranberry Brie Puff Pastry Bites are flaky, creamy, and tangy bite-sized appetizers that come together in minutes for holidays and parties.

- 1 sheet puff pastry, thawed
- 1 wheel (about 8 oz) brie cheese, rind removed and cut into small cubes
- ½ cup whole cranberry sauce
- 1 tsp chopped fresh rosemary (optional)
- 1 egg, beaten (for egg wash)
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a mini muffin tin or line with mini paper cups.
- Roll out the puff pastry on a lightly floured surface. Cut into 24 small squares.
- Press each puff pastry square into a cup of the mini muffin tin.
- Place one cube of brie into each pastry cup.
- Top each with a small spoonful of cranberry sauce and a sprinkle of rosemary if using.
- Brush exposed pastry edges with the beaten egg.
- Bake for 15-18 minutes or until golden and puffy.
- Let cool for 5 minutes before serving warm.
Notes
- Brie rind is edible and adds flavor; you can trim it if you prefer a milder bite.
- Assemble the bites ahead: refrigerate unbaked trays up to 1 hour before baking.
- Swap rosemary for thyme or add chopped pecans for texture variations.
- Serve warm for best texture and flavor.
