  • 1 tbsp olive oil
  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 1 tbsp Cajun seasoning (adjust to spice preference)
  • 1 small onion, chopped
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream (or coconut cream for dairy-free option)
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 can (14 oz) diced tomatoes, drained
  • 2 tbsp all-purpose flour
  • 2 tbsp butter
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chicken and sprinkle with half the Cajun seasoning. Cook until golden brown, about 5–6 minutes. Remove and set aside.
  2. In the same pot, melt butter. Add onion, bell peppers, celery, and garlic. Sauté until tender, about 5 minutes.
  3. Sprinkle flour over vegetables and stir to coat. Cook for 1 minute to remove raw flour taste.
  4. Slowly pour in chicken broth while stirring to avoid lumps. Add diced tomatoes, corn, and remaining Cajun seasoning. Bring to a simmer.
  5. Return chicken to the pot and cook for 10 minutes until thickened.
  6. Lower heat and stir in heavy cream. Simmer for another 5 minutes without boiling. Season with salt and pepper to taste.
  7. Serve hot, garnished with chopped parsley.

Notes

  • For dairy-free: use coconut cream instead of heavy cream.
  • Adjust Cajun seasoning to control heat; add hot sauce for extra kick.
  • To thicken, simmer longer or add a little more flour slurry.
  • To make this gluten-free, substitute gluten-free all-purpose flour or cornstarch as a thickener.
