- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream (or coconut cream for dairy-free option)
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 can (14 oz) diced tomatoes, drained
- 2 tbsp all-purpose flour
- 2 tbsp butter
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add chicken and sprinkle with half the Cajun seasoning. Cook until golden brown, about 5–6 minutes. Remove and set aside.
- In the same pot, melt butter. Add onion, bell peppers, celery, and garlic. Sauté until tender, about 5 minutes.
- Sprinkle flour over vegetables and stir to coat. Cook for 1 minute to remove raw flour taste.
- Slowly pour in chicken broth while stirring to avoid lumps. Add diced tomatoes, corn, and remaining Cajun seasoning. Bring to a simmer.
- Return chicken to the pot and cook for 10 minutes until thickened.
- Lower heat and stir in heavy cream. Simmer for another 5 minutes without boiling. Season with salt and pepper to taste.
- Serve hot, garnished with chopped parsley.
