Creamy Chicken Alfredo Pasta is a rich, velvety weeknight dinner featuring tender chicken, fettuccine, and a parmesan Alfredo sauce.

- 2 chicken breasts, boneless and skinless
- 2 tbsp olive oil
- Salt and pepper, to taste
- 3 cloves garlic, minced
- 2 cups heavy cream
- 1 cup freshly grated parmesan cheese
- 1 cup milk
- 1 tsp Italian seasoning
- 300 g fettuccine or your favorite pasta
- Fresh parsley, chopped (for garnish)
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- Season chicken with salt and pepper. Heat olive oil in a skillet over medium heat. Cook chicken for 5–6 minutes per side until golden and cooked through. Remove, rest for a few minutes, then slice thinly.
- In the same skillet, sauté garlic for 30 seconds until fragrant.
- Add heavy cream and milk, bringing to a gentle simmer. Stir in parmesan and Italian seasoning. Simmer until sauce thickens slightly.
- Toss in the cooked pasta and mix until coated in the sauce. Add sliced chicken on top.
- Garnish with fresh parsley and serve warm.
Notes
- If you want a lighter version, you can substitute part of the heavy cream with milk, but the sauce will be thinner; you can thicken with a cornstarch slurry if needed.
- For stronger flavor, use Pecorino Romano or a mix of Parmesan and Italian cheeses.
- Save a bit of pasta water to loosen the sauce if it gets too thick.
- Let the chicken rest for a few minutes after cooking to keep juices in before slicing.
- Garnish with chopped parsley as shown for a fresh finish.
