Ingredients

  • 2 chicken breasts, boneless and skinless
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 3 cloves garlic, minced
  • 2 cups heavy cream
  • 1 cup freshly grated parmesan cheese
  • 1 cup milk
  • 1 tsp Italian seasoning
  • 300 g fettuccine or your favorite pasta
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. Season chicken with salt and pepper. Heat olive oil in a skillet over medium heat. Cook chicken for 5–6 minutes per side until golden and cooked through. Remove, rest for a few minutes, then slice thinly.
  3. In the same skillet, sauté garlic for 30 seconds until fragrant.
  4. Add heavy cream and milk, bringing to a gentle simmer. Stir in parmesan and Italian seasoning. Simmer until sauce thickens slightly.
  5. Toss in the cooked pasta and mix until coated in the sauce. Add sliced chicken on top.
  6. Garnish with fresh parsley and serve warm.

Notes

  • If you want a lighter version, you can substitute part of the heavy cream with milk, but the sauce will be thinner; you can thicken with a cornstarch slurry if needed.
  • For stronger flavor, use Pecorino Romano or a mix of Parmesan and Italian cheeses.
  • Save a bit of pasta water to loosen the sauce if it gets too thick.
  • Let the chicken rest for a few minutes after cooking to keep juices in before slicing.
  • Garnish with chopped parsley as shown for a fresh finish.
