- 1 cup heavy cream or half-and-half
- 1 cup shredded cheddar or Mexican blend cheese
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
- Fresh cilantro for garnish
- Tortilla strips (optional, halal)
Instructions
- Heat olive oil in a pot over medium heat. Add onion and sauté 3–4 minutes.
- Stir in garlic and cook for 30 seconds.
- Add shredded chicken, enchilada sauce, diced tomatoes, green chiles, broth, chili powder, cumin, paprika, garlic powder, salt, and pepper.
- Bring to a simmer, cover, and cook for 15 minutes.
- Reduce heat to low. Stir in heavy cream and shredded cheese.
- Simmer another 5 minutes until creamy and fully melted.
- Taste and adjust seasoning.
