  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 can (10 oz) red enchilada sauce
  • 1 can (14 oz) diced tomatoes
  • 1 can (4 oz) diced green chiles
  • 3 cups chicken broth
  • 1 cup heavy cream or half-and-half
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • Fresh cilantro for garnish
  • Tortilla strips (optional, halal)

Instructions

  1. Heat olive oil in a pot over medium heat. Add onion and sauté 3–4 minutes.
  2. Stir in garlic and cook for 30 seconds.
  3. Add shredded chicken, enchilada sauce, diced tomatoes, green chiles, broth, chili powder, cumin, paprika, garlic powder, salt, and pepper.
  4. Bring to a simmer, cover, and cook for 15 minutes.
  5. Reduce heat to low. Stir in heavy cream and shredded cheese.
  6. Simmer another 5 minutes until creamy and fully melted.
  7. Taste and adjust seasoning.
  8. Serve warm with cilantro and optional tortilla strips.

Notes

  • For a lighter version, use half-and-half instead of heavy cream and reduce cheese by half.
  • Make it gluten-free by choosing gluten-free enchilada sauce and avoiding flour-thickened products.
