  • 4 slices turkey bacon, chopped
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 3 cups potatoes, peeled and diced
  • 3 cups corn kernels (fresh or frozen)
  • 3 cups vegetable or chicken broth
  • 1 cup milk
  • ½ cup heavy cream
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • Optional: chopped green onions or parsley

Instructions

  1. In a large pot, cook the chopped turkey bacon over medium heat until lightly crispy. Remove and set aside.
  2. Add olive oil to the same pot, then sauté onion until soft and translucent.
  3. Stir in garlic and cook for 30 seconds until fragrant.
  4. Add potatoes, corn, broth, salt, pepper, and paprika.
  5. Bring to a boil, then reduce heat and simmer for 15–20 minutes until potatoes are tender.
  6. Stir in milk and heavy cream and simmer for 5 more minutes.
  7. Use a potato masher or immersion blender to slightly thicken the soup, leaving some chunks.
  8. Stir in the cooked turkey bacon and serve warm with optional toppings.

Notes

  • Substitute turkey bacon with regular bacon or pancetta if desired.
