- 6 boneless skinless chicken thighs
- 1 tbsp olive oil
- 2 tbsp butter
- 3 cloves garlic, minced
- 8 oz mushrooms, sliced
- 1 cup chicken broth
- 1 cup heavy cream
- ½ cup grated parmesan cheese
- 1 tsp dried thyme
- ½ tsp salt, or to taste
- ½ tsp black pepper
- 2 tbsp chopped fresh parsley
Instructions
- Season chicken thighs on both sides with salt and black pepper.
- Heat olive oil in a large skillet over medium high heat. Add chicken thighs and sear for 5–6 minutes per side until golden brown and cooked through. Remove from pan and set aside.
- In the same skillet, melt butter and add sliced mushrooms. Cook for 4–5 minutes until softened and lightly browned.
- Stir in minced garlic and cook for 30 seconds until fragrant.
- Pour in chicken broth and scrape up any browned bits from the bottom of the pan. Simmer for 3–4 minutes.
- Stir in heavy cream, parmesan cheese, and dried thyme. Let sauce simmer for 5–7 minutes until thickened.
- Return chicken thighs to the skillet and spoon sauce over the top. Simmer for 5 more minutes.
- Garnish with fresh parsley and serve warm.
