  • 6 boneless skinless chicken thighs
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated parmesan cheese
  • 1 tsp dried thyme
  • ½ tsp salt, or to taste
  • ½ tsp black pepper
  • 2 tbsp chopped fresh parsley

Instructions

  1. Season chicken thighs on both sides with salt and black pepper.
  2. Heat olive oil in a large skillet over medium high heat. Add chicken thighs and sear for 5–6 minutes per side until golden brown and cooked through. Remove from pan and set aside.
  3. In the same skillet, melt butter and add sliced mushrooms. Cook for 4–5 minutes until softened and lightly browned.
  4. Stir in minced garlic and cook for 30 seconds until fragrant.
  5. Pour in chicken broth and scrape up any browned bits from the bottom of the pan. Simmer for 3–4 minutes.
  6. Stir in heavy cream, parmesan cheese, and dried thyme. Let sauce simmer for 5–7 minutes until thickened.
  7. Return chicken thighs to the skillet and spoon sauce over the top. Simmer for 5 more minutes.
  8. Garnish with fresh parsley and serve warm.
