- 8 oz fettuccine or spaghetti
- 1 tbsp olive oil
- 1 lb shrimp, peeled and deveined
- 3 garlic cloves, minced
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- ¼ cup grated parmesan cheese
- ½ tsp crushed red pepper flakes (optional)
- Salt and black pepper, to taste
- 2 tbsp chopped fresh parsley (for garnish)
Instructions
- Cook pasta according to package directions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add shrimp, season with salt and pepper, and cook for 2–3 minutes per side until pink and cooked through. Remove shrimp and set aside.
- In the same skillet, add garlic and sauté for 1 minute until fragrant.
- Pour in the cream and bring to a gentle simmer. Stir in mozzarella and parmesan cheese until melted and smooth.
- Add crushed red pepper flakes if using. Season the sauce with salt and pepper to taste.
- Toss the cooked pasta and shrimp into the sauce until fully coated.
- Garnish with fresh parsley and serve warm.
Notes
- Tip: If the sauce thickens, loosen with a splash of reserved pasta water.
- For a lighter version, use half-and-half or a lighter cream.
- Substitute with gluten-free pasta to make it gluten-free.
- Enjoy immediately; the sauce will thicken as it stands.
