  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 8 oz mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • ¾ cup heavy cream
  • ½ cup chicken broth
  • 1 cup shredded Asiago cheese
  • Optional: chopped fresh parsley

Instructions

  1. Season chicken breasts with salt, pepper, Italian seasoning, and paprika.
  2. Heat olive oil in a large skillet over medium heat. Add chicken and cook 5–6 minutes per side until golden and cooked through. Remove and set aside.
  3. In the same skillet, melt butter and add mushrooms. Cook until softened and lightly browned.
  4. Stir in garlic and cook for 30 seconds until fragrant.
  5. Pour in chicken broth and simmer for 2 minutes, scraping up any browned bits.
  6. Reduce heat to low and stir in heavy cream and Asiago cheese until smooth and creamy.
  7. Return chicken to the skillet and spoon sauce over the top. Simmer for 3–4 minutes until heated through.
  8. Garnish if desired and serve warm.

Notes

  • You can substitute Parmesan for Asiago if desired
  • Adjust salt to taste
  • Store leftovers in the fridge for up to 3 days
