- 1 lb ground halal beef or turkey
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 3 cups potatoes, peeled and diced
- 1 cup carrots, diced
- 1 cup celery, chopped
- 4 cups beef or vegetable broth
- 1½ cups milk
- ½ cup heavy cream
- 2 tbsp flour
- 2 cups shredded cheddar cheese
- 1 tsp paprika
- Salt and pepper to taste

Instructions
- In a large pot, heat olive oil over medium heat. Add ground meat and cook until browned. Drain excess fat if needed.
- Add onion and garlic and sauté for 2–3 minutes until softened.
- Stir in potatoes, carrots, celery, broth, paprika, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15–20 minutes, or until potatoes are tender.
- In a small bowl, whisk flour into milk until smooth. Pour into the soup and stir.
- Add heavy cream and shredded cheese. Stir until cheese is melted and soup is creamy.
- Serve hot with optional toppings.
