  • 3 lbs russet or Yukon gold potatoes, thinly sliced
  • 3 tablespoons butter
  • 1 medium onion, finely diced
  • 3 garlic cloves, minced
  • 3 tablespoons all-purpose flour
  • 2 cups milk
  • 1 cup heavy cream
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup shredded Parmesan
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Optional garnish: fresh parsley

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a saucepan, melt butter over medium heat. Sauté onion and garlic until soft.
  3. Stir in flour to form a roux and cook 1 minute.
  4. Slowly whisk in milk and cream. Cook until slightly thickened.
  5. Add cheddar, Parmesan, thyme, paprika, salt, and pepper. Stir until smooth.
  6. Layer half of the sliced potatoes in the baking dish. Pour half the sauce over them.
  7. Repeat with remaining potatoes and sauce.
  8. Cover with foil and bake 45 minutes.
  9. Remove foil and bake another 20–25 minutes until golden, bubbly, and potatoes are tender.
  10. Let rest 10 minutes before serving. Garnish with parsley if desired.
