Ingredients

Scale
  • 1 lb ground beef
  • 1 tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • 1 cup shredded cheddar cheese
  • ¼ cup diced dill pickles
  • 2 tbsp ketchup
  • 1 tbsp mustard
  • 12 egg roll wrappers
  • Oil for frying

Instructions

  1. Heat olive oil in a skillet over medium heat. Add ground beef, salt, pepper, and garlic powder. Cook until browned, breaking it up as it cooks. Drain excess fat.
  2. Stir ketchup and mustard into the beef and remove from heat. Let cool slightly.
  3. Add shredded cheddar cheese and diced pickles to the beef mixture and stir to combine.
  4. Place an egg roll wrapper on a flat surface. Spoon filling into the center.
  5. Fold in sides and roll tightly, sealing edges with a little water.
  6. Heat oil in a deep skillet to 350°F (175°C).
  7. Fry egg rolls in batches for 3–4 minutes, turning until golden and crispy.
  8. Remove and drain on paper towels. Serve warm.

Notes

  • For a lighter option, bake at 425°F (220°C) for 15–20 minutes, flipping once until golden.
  • Air frying: Cook at 400°F (200°C) for 8–10 minutes, turning halfway through.
  • Use 80/20 ground beef for juicier filling; avoid overfilling to prevent leaking.
  • Serve with extra ketchup, mustard, or your favorite dipping sauces.
