  • lbs boneless, skinless chicken thighs or breasts
  • lbs baby potatoes, halved
  • 3 large carrots, sliced into chunks
  • 4 tbsp unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • 1 tsp dried parsley
  • ½ tsp dried thyme
  • ½ tsp onion powder
  • ½ cup chicken broth
  • Optional: fresh parsley for garnish

Instructions

  1. Layer potatoes and carrots in the bottom of the crock pot in an even layer.
  2. Place chicken on top of the vegetables.
  3. In a small bowl, mix melted butter, garlic, salt, pepper, paprika, parsley, thyme, and onion powder.
  4. Pour the garlic butter mixture evenly over the chicken and vegetables.
  5. Add chicken broth around the sides of the crock pot.
  6. Cover and cook on low for 6 hours or on high for 3–4 hours, until chicken is tender and potatoes are fork-tender.
  7. Spoon the garlic butter sauce over everything before serving.
  8. Garnish with fresh parsley if desired and serve warm.
