Ingredients
- 1½ lbs boneless, skinless chicken thighs or breasts
- 1½ lbs baby potatoes, halved
- 3 large carrots, sliced into chunks
- 4 tbsp unsalted butter, melted
- 4 cloves garlic, minced
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp paprika
- 1 tsp dried parsley
- ½ tsp dried thyme
- ½ tsp onion powder
- ½ cup chicken broth

Instructions
- Layer potatoes and carrots in the bottom of the crock pot in an even layer.
- Place chicken on top of the vegetables.
