- 2 tbsp olive oil
- 1 medium onion, chopped
- 3 garlic cloves, minced
- 3 carrots, sliced
- 8 oz mushrooms, halved
- 2 cups beef broth
- 1 cup red grape juice (alcohol-free substitute)
- 2 tbsp tomato paste
- 1 tbsp Worcestershire sauce (halal)
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 bay leaf
- Salt and black pepper to taste
- 2 tbsp cornstarch mixed with 2 tbsp water (optional, for thickening)
- Optional: chopped fresh parsley for serving
Instructions
- Heat olive oil in a skillet over medium-high heat. Season beef with salt and pepper and sear until browned on all sides.
- Transfer beef to the crockpot.
- Add onion, garlic, carrots, and mushrooms over the beef.
- In a bowl, whisk beef broth, grape juice, tomato paste, Worcestershire sauce, thyme, rosemary, and bay leaf.
- Pour the mixture over everything in the crockpot.
- Cover and cook on low for 8 hours or on high for 4–5 hours until beef is fork-tender.
- For a thicker sauce, stir in the cornstarch slurry during the last 30 minutes.
- Remove bay leaf and serve warm, garnished with parsley if desired.
Notes
- You can brown the beef ahead of time to intensify flavor.
- Adjust salt to taste; Worcestershire sauce adds saltiness, so season gradually.
- Leftover beef bourguignon freezes well for up to 3 months.
- For a richer sauce, reduce the broth by a few tablespoons before adding to the pot.
