  • lbs beef chuck, cut into large chunks (halal)
  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 3 carrots, sliced
  • 8 oz mushrooms, halved
  • 2 cups beef broth
  • 1 cup red grape juice (alcohol-free substitute)
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce (halal)
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • Salt and black pepper to taste
  • 2 tbsp cornstarch mixed with 2 tbsp water (optional, for thickening)
  • Optional: chopped fresh parsley for serving

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Season beef with salt and pepper and sear until browned on all sides.
  2. Transfer beef to the crockpot.
  3. Add onion, garlic, carrots, and mushrooms over the beef.
  4. In a bowl, whisk beef broth, grape juice, tomato paste, Worcestershire sauce, thyme, rosemary, and bay leaf.
  5. Pour the mixture over everything in the crockpot.
  6. Cover and cook on low for 8 hours or on high for 4–5 hours until beef is fork-tender.
  7. For a thicker sauce, stir in the cornstarch slurry during the last 30 minutes.
  8. Remove bay leaf and serve warm, garnished with parsley if desired.

Notes

  • You can brown the beef ahead of time to intensify flavor.
  • Adjust salt to taste; Worcestershire sauce adds saltiness, so season gradually.
  • Leftover beef bourguignon freezes well for up to 3 months.
  • For a richer sauce, reduce the broth by a few tablespoons before adding to the pot.
