  • 2 tbsp tomato paste
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp paprika
  • Salt and black pepper to taste
  • Optional: fresh parsley for topping

Instructions

  1. Heat olive oil in a pan over medium heat and sear the beef until browned on all sides.
  2. Transfer the beef to the crockpot and add carrots, potatoes, celery, onion, and garlic.
  3. Stir in tomato paste, thyme, rosemary, paprika, salt, and pepper.
  4. Pour in the beef broth and mix gently.
  5. Cover and cook on low for 7–8 hours or on high for 4–5 hours, until the beef is tender.
  6. Taste and adjust seasoning.
