- 1 lb ground turkey or halal beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 cups potatoes, peeled and diced
- 1 cup shredded carrots
- 1 cup celery, chopped
- 3 cups chicken broth
- 1 tsp mustard
- 1 tbsp ketchup
- 1 tsp paprika
- ½ tsp black pepper
- Salt to taste
- 2 cups shredded cheddar cheese
- 1½ cups milk
- 3 tbsp flour
- 3 tbsp butter
- Optional toppings: diced pickles, extra cheese, turkey bacon crumbles
Instructions
- In a skillet, brown the ground turkey or halal beef over medium heat. Drain excess fat.
- Add cooked meat to the crockpot along with diced onion, garlic, potatoes, carrots, celery, broth, mustard, ketchup, paprika, salt, and pepper.
- Cover and cook on low for 6–7 hours or high for 3–4 hours, until vegetables are tender.
- In a small saucepan, melt butter over medium heat. Whisk in flour and cook for 1–2 minutes. Slowly whisk in milk and cook until thickened.
- Add the milk mixture and shredded cheese to the crockpot. Stir well until cheese is melted and soup is creamy.
- Serve hot with optional toppings.

- Brown the meat thoroughly to render fat and develop flavor.
- Stir the cheese in at the end to keep it creamy and avoid graininess.
