Description

  • 2 lbs boneless, skinless chicken breasts
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • 2 tbsp olive oil
  • 1 cup chicken broth
  • ¼ cup fresh lemon juice
  • 2 tbsp capers, drained
  • 3 cloves garlic, minced
  • 2 tbsp unsalted butter
  • 2 tbsp cornstarch mixed with 2 tbsp water
  • Optional: chopped parsley for garnish

Instructions

  1. Season chicken breasts with salt, pepper, and garlic powder.
  2. Heat olive oil in a skillet over medium heat and lightly sear chicken on both sides for color.
  3. Transfer chicken to the crockpot.
  4. Add chicken broth, lemon juice, capers, and minced garlic over the chicken.
  5. Cover and cook on low for 5–6 hours or high for 3–4 hours until chicken is tender.
  6. Remove chicken and whisk cornstarch slurry into the sauce. Add butter and cook on high for 10–15 minutes until slightly thickened.
  7. Return chicken to the crockpot, spoon sauce over the top, and garnish if desired.
