- 2 lbs boneless, skinless chicken breasts
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder
- 2 tbsp olive oil
- 1 cup chicken broth
- ¼ cup fresh lemon juice
- 2 tbsp capers, drained
- 3 cloves garlic, minced
- 2 tbsp unsalted butter
- 2 tbsp cornstarch mixed with 2 tbsp water
- Optional: chopped parsley for garnish
Instructions
- Season chicken breasts with salt, pepper, and garlic powder.
- Heat olive oil in a skillet over medium heat and lightly sear chicken on both sides for color.
- Transfer chicken to the crockpot.
- Add chicken broth, lemon juice, capers, and minced garlic over the chicken.
- Cover and cook on low for 5–6 hours or high for 3–4 hours until chicken is tender.
- Remove chicken and whisk cornstarch slurry into the sauce. Add butter and cook on high for 10–15 minutes until slightly thickened.
- Return chicken to the crockpot, spoon sauce over the top, and garnish if desired.
