- 1 tsp garlic powder
- 1 tbsp olive oil
- 8 oz mushrooms, sliced
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- ½ cup grated parmesan cheese
- 1 tsp dried thyme
- 1 tbsp cornstarch mixed with 2 tbsp water
- 2 tbsp chopped fresh parsley
Instructions
- Season chicken thighs with salt, black pepper, and garlic powder.
- Heat olive oil in a skillet over medium heat and sear chicken for 2–3 minutes per side until lightly golden.
- Place sliced mushrooms and minced garlic in the bottom of the crockpot.
- Arrange seared chicken thighs on top.
- In a bowl, whisk together chicken broth, heavy cream, parmesan cheese, and dried thyme. Pour over the chicken.
- Cover and cook on low for 5–6 hours or on high for 3–4 hours until chicken is tender.
- Stir in cornstarch slurry during the last 20 minutes of cooking to thicken the sauce.
- Garnish with fresh parsley before serving.
