Instructions

  1. In a skillet, heat olive oil over medium heat and brown the ground beef until fully cooked. Drain excess fat.
  2. Add the cooked beef to the crockpot along with potatoes, onion, garlic, mixed vegetables, and beef broth.
  3. Stir in salt, pepper, paprika, and thyme.
  4. Cover and cook on low for 6 hours or high for 3–4 hours, until potatoes are tender.
  5. Use a potato masher or immersion blender to slightly thicken the soup, leaving some chunks.
  6. Stir in milk, heavy cream, and shredded cheddar cheese.
  7. Cover and cook for an additional 15 minutes until cheese is melted and soup is creamy.
