  • lbs beef chuck roast
  • 1 tbsp olive oil
  • 1 small onion, sliced
  • 3 cloves garlic, minced
  • 3 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • ½ tsp black pepper
  • ½ tsp dried thyme
  • 4 hoagie rolls or sandwich buns
  • 4 slices provolone or mozzarella cheese

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Sear chuck roast on all sides until browned.
  2. Place sliced onion and garlic in the bottom of the crockpot and set the roast on top.
  3. Pour beef broth over the roast, then add Worcestershire sauce, onion powder, garlic powder, pepper, and thyme.
  4. Cover and cook on low for 8 hours until beef is very tender and easy to shred.
  5. Remove beef and shred with two forks. Return shredded beef to the crockpot to soak up the juices.
  6. Toast sandwich rolls if desired, then pile beef onto each roll and top with cheese.
  7. Serve sandwiches with small bowls of the au jus from the crockpot for dipping.
