  • 2 lbs boneless, skinless chicken thighs or breasts
  • 1/2 cup honey
  • 1/3 cup low-sodium soy sauce
  • 4 cloves garlic, minced
  • 2 tbsp ketchup
  • 1 tbsp olive oil
  • 1/2 tsp black pepper
  • 1/2 tsp dried ginger
  • 1 tbsp cornstarch mixed with 2 tbsp water
  • Optional: sesame seeds or chopped green onions for garnish

Instructions

  1. Place chicken in the bottom of the crockpot.
  2. In a bowl, whisk honey, soy sauce, garlic, ketchup, olive oil, black pepper, and dried ginger.
  3. Pour sauce over the chicken, turning to coat.
  4. Cover and cook on low for 6-7 hours or high for 3-4 hours, until chicken is tender.
  5. Remove chicken and shred or leave whole as desired.
  6. Stir cornstarch slurry into the crockpot sauce and cook on high for 10-15 minutes until thickened.
  7. Return chicken to the sauce, coat well, and serve warm with garnish if desired.
