- 1 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried thyme
- 1 tsp paprika
- 1 large onion, sliced
- 4 cloves garlic, minced
- 1½ cups beef broth
- 2 tbsp tomato paste
- 1 tbsp Worcestershire sauce (halal-certified)
- 1½ lb baby potatoes, halved
- 4 large carrots, cut into chunks
- 2 tbsp cornstarch + 2 tbsp water (for thickening)
- Fresh parsley for garnish
Instructions
- Pat the beef roast dry and season all sides with salt, pepper, garlic powder, onion powder, thyme, and paprika.
- Heat olive oil in a skillet over medium-high heat and sear the roast on all sides until browned, about 2–3 minutes per side.
- Place the sliced onion and minced garlic in the bottom of the crockpot. Set the seared roast on top.
- Add beef broth, tomato paste, and Worcestershire sauce around the roast. Then add potatoes and carrots on top and around the meat.
- Cover and cook on low for 8 hours, or until beef is fork-tender.
- Remove the beef and vegetables. Pour the cooking liquid into a saucepan, whisk in cornstarch slurry, and simmer until thickened.
- Serve the roast sliced with gravy drizzled on top and garnish with fresh parsley.

- For a thicker gravy, increase the cornstarch slurry.
- You can swap potatoes for sweet potatoes for variation.
