  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 3 cups cooked chicken breast, diced

  • 1 cup carrots, diced
  • 1 cup frozen peas
  • 4 cups chicken broth
  • 1 cup milk
  • 1/2 cup heavy cream
  • 1/4 cup all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme
  • 1/2 tsp dried parsley

Instructions

  1. In a large pot, melt butter with olive oil over medium heat.
  2. Add onion and cook until soft and translucent, about 4 minutes.
  3. Stir in garlic and cook for 30 seconds until fragrant.
  4. Sprinkle flour over the mixture and stir for 1 minute to form a roux.
  5. Slowly whisk in chicken broth until smooth.
  6. Add chicken, potatoes, carrots, salt, pepper, thyme, and parsley.
  7. Bring to a boil, then reduce heat and simmer for 20 minutes until potatoes are tender.
  8. Stir in milk, heavy cream, and peas.
  9. Simmer for 5 more minutes until thick and creamy. Serve warm.

  • Leftover rotisserie chicken can be used to speed up prep.
