- 2 lbs halal beef stew meat, cut into 1-inch pieces
- 2 tbsp olive oil
- 2 tbsp all-purpose flour
- 1 large onion, diced
- 3 carrots, peeled and sliced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 3 medium potatoes, peeled and cubed
- 4 cups halal beef broth
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 bay leaf
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
For the Dumplings:
- 1 cup all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 2 tbsp butter or margarine
- 1/2 cup milk
Instructions
- Toss beef with flour, salt, and pepper. Heat olive oil in a large Dutch oven or pot over medium-high heat. Brown the beef in batches, then remove and set aside.
- In the same pot, sauté onions, carrots, and celery for 5 minutes. Stir in garlic and cook for 1 more minute.
- Add tomato paste, thyme, rosemary, bay leaf, and beef broth. Return beef to the pot, bring to a boil, then reduce heat to low. Cover and simmer for 1 1/2–2 hours until beef is tender.
- Add potatoes and cook uncovered for 30 minutes, until vegetables are soft and the broth is rich.
- For the dumplings, mix flour, baking powder, and salt in a bowl. Cut in butter until crumbly, then stir in milk to form a sticky dough.
- Drop spoonfuls of the dough over the simmering stew. Cover and cook for 15 minutes without lifting the lid—dumplings will puff up and cook through.
- Remove bay leaf, garnish with parsley, and serve warm.
Notes
- Brown the beef in batches to develop more flavor and avoid overcrowding the pot.
- Keep the lid on while the dumplings cook to trap steam and ensure fluffy dumplings.
- Feel free to swap in other root vegetables if needed (e.g., parsnips or potatoes).
- Leftovers refrigerate well for up to 3 days; reheat gently on the stove.
