  • 2 tbsp olive oil
  • 2 tbsp all-purpose flour
  • 1 large onion, diced
  • 3 carrots, peeled and sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 3 medium potatoes, peeled and cubed
  • 4 cups halal beef broth
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

For the Dumplings:

  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 tbsp butter or margarine
  • 1/2 cup milk

Instructions

  1. Toss beef with flour, salt, and pepper. Heat olive oil in a large Dutch oven or pot over medium-high heat. Brown the beef in batches, then remove and set aside.
  2. In the same pot, sauté onions, carrots, and celery for 5 minutes. Stir in garlic and cook for 1 more minute.
  3. Add tomato paste, thyme, rosemary, bay leaf, and beef broth. Return beef to the pot, bring to a boil, then reduce heat to low. Cover and simmer for 1 1/2–2 hours until beef is tender.
  4. Add potatoes and cook uncovered for 30 minutes, until vegetables are soft and the broth is rich.
  5. For the dumplings, mix flour, baking powder, and salt in a bowl. Cut in butter until crumbly, then stir in milk to form a sticky dough.
  6. Drop spoonfuls of the dough over the simmering stew. Cover and cook for 15 minutes without lifting the lid—dumplings will puff up and cook through.
  7. Remove bay leaf, garnish with parsley, and serve warm.

  • Brown the beef in batches to develop more flavor and avoid overcrowding the pot.
  • Keep the lid on while the dumplings cook to trap steam and ensure fluffy dumplings.
