  • 2 lb boneless skinless chicken breasts or thighs
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning or homemade seasoning
  • 1 can Rotel tomatoes with green chilies
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 4 cups halal, gluten-free chicken broth
  • 1 cup heavy cream
  • ½ tsp salt, adjust to taste
  • ½ tsp black pepper
  • Optional toppings: shredded halal-friendly cheese, chopped cilantro, avocado slices

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 3–4 minutes. Stir in garlic and cook 30 seconds.
  2. Add chicken, taco seasoning, Rotel tomatoes, black beans, corn, and chicken broth. Stir well.
  3. Bring to a boil, then reduce heat and simmer for 20–25 minutes until chicken is cooked through.
  4. Remove chicken, shred it with two forks, then return it to the pot.
  5. Stir in heavy cream, salt, and black pepper. Simmer for 5 more minutes until creamy and heated through.
