  • 3 cups cooked shredded chicken
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 2 cups mushrooms, sliced
  • 2 cups chicken broth
  • 1 cup sour cream
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup shredded Swiss or Monterey Jack cheese
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • ½ tsp black pepper
  • Salt to taste
  • Optional topping: 1 cup buttered breadcrumbs or crushed crackers

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a skillet, sauté onion, garlic, and mushrooms until softened.
  3. In a large bowl, combine cooked wild rice, shredded chicken, sautéed vegetables, chicken broth, sour cream, cream of chicken soup, cheese, thyme, parsley, pepper, and salt.
  4. Mix until fully combined, then spread evenly in the baking dish.
  5. Add breadcrumb topping if desired.
  6. Bake 45–50 minutes or until bubbly and lightly golden.
  7. Let rest 5 minutes before serving.
