  • 34 lbs beef chuck roast (halal)
  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 4 garlic cloves, minced
  • 4 large carrots, cut into chunks
  • 56 baby potatoes or 4 large potatoes, cut into chunks
  • 3 cups beef broth
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce (halal)
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 bay leaves
  • Optional: fresh parsley for serving

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Season the roast with salt and pepper, then sear on all sides until browned.
  2. Place onion, garlic, carrots, and potatoes in the bottom of the crock pot.
  3. Set the seared roast on top of the vegetables.
  4. In a bowl, whisk beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, paprika, salt, and pepper. Pour over the roast.
  5. Add bay leaves, cover, and cook on low for 8–9 hours or on high for 4–5 hours until the beef is fork-tender.
  6. Remove bay leaves, slice or shred the roast, and serve with vegetables and broth. Garnish with parsley if desired.

Notes

  • Brown the beef before slow cooking to deepen flavor.
  • Vegetables can be adjusted to taste; add parsnips or mushrooms if desired.
  • Skim fat if needed; thicken the sauce with a cornstarch slurry if you prefer a thicker gravy.
  • Leftovers are great over mashed potatoes or rice.
  • For gluten-free needs, ensure Worcestershire sauce is gluten-free or swap with tamari.
