- 2 tbsp olive oil
- 1 medium onion, chopped
- 4 garlic cloves, minced
- 4 large carrots, cut into chunks
- 5–6 baby potatoes or 4 large potatoes, cut into chunks
- 3 cups beef broth
- 2 tbsp tomato paste
- 1 tbsp Worcestershire sauce (halal)
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp paprika
- Salt and pepper to taste
- 2 bay leaves
- Optional: fresh parsley for serving
Instructions
- Heat olive oil in a skillet over medium-high heat. Season the roast with salt and pepper, then sear on all sides until browned.
- Place onion, garlic, carrots, and potatoes in the bottom of the crock pot.
- Set the seared roast on top of the vegetables.
- In a bowl, whisk beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, paprika, salt, and pepper. Pour over the roast.
- Add bay leaves, cover, and cook on low for 8–9 hours or on high for 4–5 hours until the beef is fork-tender.
- Remove bay leaves, slice or shred the roast, and serve with vegetables and broth. Garnish with parsley if desired.
